Potato casserole with meat and mushrooms

Ingredients:

  • 1 lb (450g) ground beef, pork, or a mix (you can also use diced meat if you prefer)
  • 4-5 large potatoes (peeled and thinly sliced)
  • 1 cup mushrooms (sliced, any variety)
  • 1 large onion (chopped)
  • 3 garlic cloves (minced)
  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)
  • 1 cup sour cream or heavy cream
  • 1/2 cup beef or chicken broth
  • 1 tbsp olive oil
  • 1 tsp dried thyme or oregano
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley (chopped, for garnish)

Instructions:

1. Prepare the Meat Mixture:

  • Heat olive oil in a large skillet over medium heat.
  • Add the chopped onion and cook until softened, about 5 minutes.
  • Add the minced garlic and cook for another minute.
  • Add the ground meat to the skillet and cook until browned and cooked through. Drain any excess fat.
  • Stir in the sliced mushrooms and cook until they are tender, about 5 minutes.
  • Season with dried thyme or oregano, paprika, salt, and pepper. Remove from heat and set aside.

2. Prepare the Potatoes:

  • Preheat your oven to 375°F (190°C).
  • Thinly slice the potatoes into rounds. You can use a mandoline for even slices if you have one.

3. Assemble the Casserole:

  • In a greased baking dish, arrange a layer of potato slices at the bottom.
  • Spread half of the meat and mushroom mixture over the potatoes.
  • Add another layer of potato slices on top of the meat.
  • Spread the remaining meat mixture over this layer.
  • Finish with a final layer of potato slices on top.

4. Prepare the Cream Sauce:

  • In a bowl, mix together the sour cream or heavy cream with the beef or chicken broth. Season with salt and pepper.
  • Pour the cream mixture evenly over the casserole.

5. Bake the Casserole:

  • Cover the baking dish with aluminum foil and bake for 45 minutes.
  • Remove the foil and sprinkle the shredded cheese on top.
  • Bake uncovered for an additional 15-20 minutes, or until the cheese is melted and bubbly and the potatoes are tender (you can test with a fork).

6. Serve:

  • Let the casserole cool for a few minutes before serving.
  • Garnish with fresh parsley if desired.
